Chicken and Barley Soup

1/2 yellow onion
3 stalks celery
4 cloves garlic
1 cup barley
3-4 tablespoons kosher salt
1 tablespoon pepper
Chicken Bones (can sub 2 cups chicken stock without bones)
8 cups of water (give or take, depending on chicken size)
1 Tbsp Herb & Olive CBD EVOO

Chef Note: This recipe fluctuates with what you have on hand. The night before, we made a whole roasted Jidori chicken. We don't like to let anything go to waste, so after carving the whole chicken, we had a carcass and some other parts left to make a stock.
Step 1: Chop veggies
Chop celery, carrots and onion into large chunks (about an inch wide). You want these chunks larger so they keep a good consistency during the cook. Otherwise, they will just turn to mush. Set these aside for now.
Step 2: Break down garlic
Break down the garlic by cutting the ends off, and smashing each clove with the side of your knife. Once the outer layer is removed, set aside
Step 3: Prepare the stock
Use the the leftover parts / carcass, and throw these into a deep pot. Add celery, carrots, onions, garlic and salt and pepper. Add the 8 cups of water. Bring everything to a boil for 30 seconds, then drop the heat down to a simmer (low heat). Set a timer for 4 hours, and walk away.
Chef Note: Try and use Jidori chicken when you can. The quality and flavors are superb. The fattier the bones, the better. Ideally, you find chicken feet, neck and legs, and put those all into a pot. Making a good stock is time consuming but it doesn't require your undivided attention, it's perfect for a lazy weekend meal.
Step 5: Good time for a cocktail

Step 4: Make it hearty with the barley
After everything is cooked down, add a cup of barley. Cook everything down for another 30 minutes and voila. Soup is served.
Step 5: Serve it up
Using a ladle, large spoon or whatever you have on hand, pour the soup into a bowl. Make sure you get a good ratio of veggies : broth : chicken : barley. Drizzle a table of Herb & Olive CBD EVOO on top, and you are ready to eat.
