Avocado Toast w/ Poached Egg

  • 1 Farm egg

  • 2 Slices sourdough bread

  • 1 Medium avocado

  • 1/2 Meyer lemon

  • 1/2 Jalapeño

  • 1 Green onion

  • Salt / pepper to taste

  • 1 tbsp butter (or ghee)

  • 1 tbsp Herb & Olive CBD EVOO



Step 1: Prep the toppings

Cut the avocado into cubes. Cut lemon in half. Dice jalapeño and remove the seeds (or keep them in if you want it spicier).

Step 2: Combine the toppings

Add avocado, jalapeño, salt / pepper and squeeze half a lemon (remove seeds) into a bowl and mix together. Set aside for now.

Step 3: Poach the egg

Step 4: Toast the bread

Toast the bread until it's light brown in color. A perfectly toasted bread will be light brown and crunchy on the outside and soft on the inside. Once you've reached this consistency, take the bread out and get ready to plate.

Step 5: Plate it up

Butter the bread (or use ghee). Add the avocado mixture followed by an egg on top. Drizzle a tbsp of Herb & Olive CBD EVOO and add some finishing salt if you'd like. Some chives or parsley are a nice touch for a little bit of green contrast.
